Could we really live without eggs? Life indeed would be very different if eggs became nonexistent on Mother Earth or if California Gemperle Farms just decided to stop farming eggs. So some of us in the Gemperle Family decided to explore this question at a very profound and deep level. We determined that eggs are very pervasive in our lives,  from the foods we eat to the immunizations we give our kids, and with the cosmetics we put on our face. Eggs have had many uses over the centuries and have come to be one of the natural staples we have in our daily lives whether we know it or not. Foods
We discovered that eggs, or sometimes just their proteins or fats,  are in so many of the foods that we eat everyday. Read the paragraph below and some items may surprise you!

Here are just a few of the items: Mayonnaise, breads, cakes, rolls, scones, fish sticks,  and other breaded foods, custard, soups, eggnog, energy bars, ice cream, fresh pasta, protein powders, pudding, quiche, malted beverages, meringue, meatloaf, salad dressings, as well as many prepared sauces. It would be really difficult to cook and bake a diverse range of foods without eggs.

Processed Foods
Many processed foods that we eat have egg proteins. Different names for egg proteins include: Globulin, lecithin, lysozyme, ovalbumin, ovovitellin, albumin, egg substitute (like egg beaters). So if you noticed lecithin on your food label – you can be sure you have eaten eggs.

Eggs and egg shells are also used for other kinds of food processing like clarifying, as in meat stocks and wine. Also, have you ever noticed a shiny crust on your bread?  That beautiful yellow crust comes from an egg wash.

Vaccines
Did you know that eggs are in many of the vaccines we get. The measles-mumps-rubella (MMR) contains eggs as well as many of the flu vaccines we get.

Infant Formula
Could you have guessed that infant formula also can contain eggs? Egg oil can be a valuable source of polyunsaturated fatty acids and may be combined with fish oil to produce infant formula.

Hair Care Products
I bet you did not know that eggs are in many skin and hair products. The egg yolk oil has many trigycerides useful in these products. Egg oil is rich in polyunsaturated fatty acids such as omega-3 fatty acids and omega-6 fatty acids. It closely resembles the lipid profile of human skin so it makes a perfect ingredient for skin care products. In fact, many ancient cultures used egg oil as a topical moisturizer, anti-bacterial,  and ointment for burns and other skin conditions.
