Pumped up Pumpkin Pie by Gemperle Farms

 

This is an easy and yummy pumpkin pie-ish dessert.  Just lose the crust and pump it up and don’t forget to thank those Gemperle Chickens for those eggs.
Get your kids to prepare this, everyone will be happy!

Ingredients
1  15oz. can solid pack pumpkin
1  12 oz. can evaporated milk
3 eggs
1 cup sugar
4 teaspoon pumpkin spice
1 yellow cake mix
¾ cup melted butter
1 cup chopped almonds

Directions
Step 1. Turn oven on to 350* degrees
Step 2. Grease a 9×13 inch baking dish.
Step 3. Mix together pumpkin, evaporated milk, eggs, sugar and pumpkin spice.  Transfer to baking dish.
Step 4. Sprinkle the dry cake mix over pumpkin mixture.
Step 5. Drizzle with melted butter and almonds.
Step 6. Place in oven and bake for 1 hour.

Kids Thanksgiving Crustless Pumpkin Pie with Crumble Topping

My kids have never been fans of the crust of a pie – they love the insides. Here is the perfect recipe that’s also easy for your kids to make on their own with just a bit of adult supervision. Kids, it’s time for you to make part of the Thanksgiving meal this year. Have fun!

Ingredients:
1 can (16 oz.) pumpkin
1 ½ cups half and half
2 eggs
1/2 cup brown sugar
1/2 cup all-purpose flour
1 1/2 teaspoons pumpkin pie spice OR 1 t. cinnamon, 1/8 t. each of allspice, cloves, nutmeg, and ginger
3/4 teaspoon baking powder
1/4 teaspoon salt

Ingredients for Crumble Topping:
1/4 cup brown sugar
1/4 cup quick cooking oat
1/4 cup chopped almonds
2 tablespoons butter

Step 1. Heat oven to 350° F.
Step 2. In a large bowl mix pumpkin, half and half, eggs, sugar, flour, spices, baking powder, and salt. Mix until smooth.
Step 3. Grease a 9-inch pie pan and pour in the mixture.
Step 4. Make crumble mixture. Combine brown sugar, oats and almonds and mix in butter to make a crumbly topping. Sprinkle crumbs over pie filling.
Step 5. Bake 50-55 minutes or until knife inserted into center of pie comes out clean.

Lukes Favorite — 4 Minute Kids Egg Burrito Breakfast

This is my son Lucas’s favorite breakfast before school. I love it because it only takes 1 fry pan, one spatula and 1 plate – so there is not much to clean up and no matter how rushed we are in the morning there is always time to prepare this hot nutritious breakfast. Also depending on the age of your child they may even be able to prepare it themselves.

My son love the tortilla heated in the pan because you can make it crispy and it fluffs up a bit too! This nutritious breakfast keep him going all morning. It’s total brain food!!!

My favorite part of the recipe is —- hardly any cleanup! Only 1 pan, 1 spatula and 1 plate.

Utensils needed:
One fry pan
One spatula
One plate

Ingredients:
Small slice of butter
One large egg (I always use the Omega 3’s for extra nutrition and less saturated fat).
One slice ham (Preferably the Boars Head Brand without nitrates)
One tortilla

Step 1. Heat fry pan on medium heat and place small slice of butter in pan.
Step 2. Take the spatula and spread the melted butter around the pan.
Step 3. Crack the egg and put it in the pan. Take your spatula and bang the yolk to break it. When it is cooked almost all the way through flip it over with the spatula. Now throw put the slide of ham in the pan. When thoroughly cooked remove ham and egg from pan and place on the plate.
Step 4. Put tortilla in the pan. After about 30 seconds flip it to warm it on the other side. Remove from pan when warm and slightly toasted.
Step 5. Put the egg and ham in the middle of the tortilla and roll it up.

For some extra nutrition. Wash a handful of berries and serve them on the side.

Also, If you are really in a hurry this transports easily in the car on the way to school. Just wrap in a napkin or piece of foil.

Fluffy Cinnamon French Toast

Another great recipe with the help of eggs supplied by our Gemperle Chickens. Have fun making these tasty French toast for your family. The flour in this recipe makes them get fluffy unlike traditional French toast.

Ingredients:
1/4 cup all-purpose flour
1 cup milk
One Pinch salt
3 eggs
1 teaspoon ground cinnamon
1 tablespoon white sugar or you can substitute honey
10 slices bread
1 Tablespoon butter

Step 1. Mix all the ingredients except bread.
Step 2. Dip bread in egg mixture
Step 3. On medium heat. Melt the butter in a skillet.
Step 4. Fry French toast until golden brown on each side.

Enjoy with maple syrup, yogurt, powdered sugar or Jam.
