Annemarie’s most asked for Gemperle Farms Holiday cookie recipe….. Butter Cookies With Lemon Icing
Have you ever had a killer holiday cookie recipe? The kind of cookie that everyone raves about. Folks ask you for the recipe and you share it with joy. Well, my mom made a holiday cookie every year that fit this description. The memories of this sweet, crisp buttery delight will haunt one forever. They are a proven winner … just ask any holiday guest at the Gemperle home.
My mom was an amazing cook and baker — everyone that knew her can testify to support my statement. Her holiday cookies were to die for. As a child, I remember that she would start baking during the first week of December — freezing batches so they would stay fresh. She would make about ten to twelve varieties, some Swiss specialties as well as her own recipes perfected throughout the years.
I decided, because of high demand, that I needed to share her most famous recipe of all. Enjoy these baked perfections and remember Annemarie with each bite. She will be smiling beautifully at you from her place of peace. As you bake and enjoy her favorite recipe, remember all Annemarie’s life energy that she and many moms have put into making the holidays special.
Butter Cookies with Lemon Icing
Ingredients:
3 cups four
1 cup sugar
1 egg
1 cup plus 2 Tablespoons butter
1 cup almonds finely chopped (best to use a food processor)
Icing:
3/4 cup powdered sugar
Fresh lemon juice ( approximately 1 Tablespoon)
Mix well to make the icing.
Directions:
Cream butter and sugar. Add egg and then blend in flour and nuts and make a smooth dough. Make long rolls 3/4 inch thick on a buttered cookie sheet and press with a finger or the side of your hand to make wedges (see photo above). Bake at 350 degrees for 15-20 minutes until slightly brown. Remove from oven and cool slightly then brush with lemon icing. Cut at a diagonal while still warm. Important: make sure you cut while they are warm or they will break and crumble.
