Avocado Lime Pie

Pump up your lime pie with a secret ingredient, Avocado! Use very ripe avocados. We use fresh raw eggs in this recipe. It is recommended by food scientists that pregnant women, young children, the elderly and the infirm do not consume raw eggs.

Ingredients
  

  • 1 cup sieved avocado pulp
  • 1 14 ounce can sweetened condensed milk
  • 1-2 limes Grated or zested
  • ½ cup fresh lime juice
  • 2 egg yolks
  • 1 pinch salt
  • 1 pre-baked pastry for a 9 inch single pie crust.

Instructions
 

  • Combine sweetened condensed milk, lime zest, lime juice, lightly beaten egg yolks, and salt, blend until mixture thickens. (If you are concerned with eating raw eggs cook this mixture to 170 degrees in a sauce pan over medium heat).
  • Stir in Avocado pulp into cool mixture.
  • Pour filling into prepared pie shell. Chill pie several hours. Garnish with whipped cream, and serve.
